    Cold Winter Congee1 oz. astragalus root1/2 cup long-grain white rice8 cups of water or stock12 black dates, saeokd and pitted1 large or 2 small carrots, diced1 T fresh ginger, minced2 tsp. cinnamon1/2 tsp. powdered ginger1 tsp. powdered cardamom seedPlace all the ingredients in a large pot. Bring to a boil and then simmer for 1 to 2 hours until the congee is soft and the consistency of porridge. Remove the astragalus root.
